Today I woke up feeling great! All that vegan goodness from yesterday must’ve done me good. Either that or the fact that because I had no caffeine in my system that I fell asleep at 11pm. Hmm.

Anyways, today I started off with a Celery Apple Smoothie which was weirdly crunchy.

Clearly I did not take the above picture, but that’s what it looked like before I gulped it down while rushing out the door because I was running late AS USUAL.                                (May be a new goal forming here…we’ll see)

Morning snack was 1/2 an Avocado with lime & salt. MEXICO!

The trail mix ( I used HEB’s Energy mix) really pumped the salad up and made it super filling and delicious.

After lunch I took my dog buds and bugs to the lake for a      3 mile walk. After that I came home and did some booty blasting exercises and this day’s workout fitness and finished it up with some yoga.

Dinner! Dinner was an achievement today. I made Roasted Chickpea, Tomato & Zucchini Soup which was time consuming (have to soak the chickpeas for an hour and then roast for an hour), but the end result was delicious. Roasted Chickpea & ZucchiniAgain it was a little crunchy for a soup as the chickpeas become like peanuts when you roast them. Maybe I was doing it wrong, but that’s how my soup turned out. It was good though because then I didn’t need any crackers or bread or anything with the soup as it was already crunchy and mouthfeely <–new word I like btw.

No dessert tonight as I ate waaay too much of that soup, but I did finish the day with a nice cup of lemon/ginger tea 🙂

Recipes for today:

Celery/Apple Smoothie
½ cup Almond Milk
3 Celery Stalks
1/2 Cucumber
1/3 cup Spinach
1 small Green Apple
½ Lime
1 tbsp. Coconut Oil
1/2 cup Pineapple

Spinach, Avocado & Trail Mix Salad                                                                                                               1 cup Spinach                                                                                                                                                        ½ Avocado                                                                                                                                                        1/3 cup Trail Mix                                                                                                                                                1/4 Red Onion (if desired)                                                                                                                                 2 tsp. Balsamic Vinagrette

Roasted Tomato, Zucchini, and Chickpea Soup
1/2 Medium Yellow Onion
4 Small Zucchini
1 16-Ounce Bag Chickpeas (follow directions for soaking)
2 – 3 Small Cloves Garlic
2 Tablespoons Olive Oil
2 Cups Vegetable Stock
1 Can Fire-Roasted Tomatoes
Salt and Pepper                                                                                                                                                      1 Bay Leaf

    I’m planning on making lentils in coconut milk, this coming week.
